Precious Black Winter Truffle

T. Melanosporum vittadini or  the so called queen of the French truffles, also known as the Perigord truffle. This variety is produced throughout southern France and in many Italian and Spanish regions and recently in Greece.

It is by far the most expensive truffle between the black varieties. It is the most eligible truffle for cultivation. Joseph Talon, the first official truffle cultivator in Saint-Saturin-les-Apt, France in 1808, has been followed by many others who attempted the same task in similar rocky areas.

Nowadays apart from Italy and Spain which have been active in truffle cultivation for more than 100 years; attempts of great success have been made to cultivate the rare fungus in the Southern Hemisphere as well. New Zealand and Australia have been producing the black winter diamond during European summer for the past 20 years. 

The flesh of the truffle (gleba) has a deep brown reddish, in excellent maturity black color with fine whitish veins while the external part (peridio) - black coloured  with reddish shades when not completely mature is fully covered with pyramidic warts slightly rising from the surface - fairly smooth.
